San Shu Gong

Betehso biscuit was a very popular traditional delicacy back in the olden days during our grandpa's era. Due to it's laborious making process, many bakeries and confectioneries had since discontinued this production until it almost became extinct today.

To illustrate the tedious making process, the bakers of betehso biscuit in the past needed to insert the right amount of burning coconut shell before covering the kiln with it's lid. After preheating at high temperature, the filled doughs were attached onto the heated kiln's inner wall. 

The increasing temperature caused the dough, and piping hot maltose in the dough to flow downwards due to the interesting structure of the kiln which formed into a natural horse hoof shape. Hence the name betehso, as Be-Teh means horse hoof in chinese. Only the experienced baker could produce the marvelous betehso biscuit, which comes with flaky-layered puff pasty and right amount of maltose filling. 

For the sake of preserving this dying traditional delicacy, San Shu Gong painstakingly trial and error through he years and finally succeeded in rescuing and preserving the old tradition, original taste of 'betehso' recipes with the ingenious use of new technology,
