Recipe : 1. Peel and mash the potatoes with a potato masher. Mix them with flour, egg yolk and salt. Add just enough flour so the mixture does not stick to your hands. 2. Shape into logs the thickness of your finger. Cut each rope into 2cm pieces. If sticky, lightly dust your working surface with flour. 3. Shape the pieces into the typical grooved gnocchi shape. 4. Bring salted water to the boil in a large pot. Add gnocchi (do not overcrowd the pot, they need to be able to move around) and simmer till the gnocchi float on top. Remove with a slotted spoon, drain in a colander, and serve with a tomato sauce of your choice.
