BIMBER DISTILLERY was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, our whisky is expertly blended and bottled onsite at our distillery.
Our hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality.

An exceptional single cask release fully matured in a EX-PEDRO XIMENEZ CASK.
Sourced from Spain, this cask was previously utilised in a Jerez solera for several decades, imparting a delectable selection of bright and rich fruit-forward notes.

TASTING NOTES
NOSE: Resonantly sherried raisins and sultanas join hedgerow berries and cranberry jelly whilst apple turnovers and scattered with brown sugars and served alongside a slice of chocolate cake.
TASTE: Thick and richly textured with gingerbread and nutmeg cake. Rum soaked raisins and fig rolls are joined by bitter dark chocolate whilst fresh and reduced berries provide succulent sweetness.
FINISH: Sustained deep sherry with receding but still perky spicing.
